Hearty potato salad with subtle acidity, mustard and crunchy samphire.
Ingredients
6 potatoes
1 tsp mustard
1 garlic clove
1 onion
1/2 cup olive oil
Juice of half a lemon
40 g samphire
Method
Boil the potatoes until tender and let them cool slightly.
Prepare a dressing with mustard, garlic, onion, olive oil and lemon juice.
Toss with the potatoes and samphire and serve warm or chilled.
